I only title this that because that is what we ate for dinner Friday night when Jim and I camped out in the Monument off Road 400, also known as Cottonwood Canyon Road. I’ve known forever that this town is surrounded by never-ending adventure, but I am always thrilled and amazed when I discover incredible places that I had no idea existed at all. All the hidden gems waiting off that road just made me so happy to live where I do. Combine that chunk of desert with the two best dogs ever, a pretty rad dude, macaroni and wine, and well, you get a whole lot of awesome.
